Kelly’s at SouthBridge IN THE NEWS!

Recently we posted a rave review about our friends over at Kelly’s at SouthBridge in the heart of Old Town Scottsdale, but we had to post another mini-shoutout to our neighbors on their latest BIG shout out from Arizona Foothills Magazine!

That’s right, our next door neighbors were named Best of the Valley’s Best Burger and Outdoor Seating of 2013, featuring Cassie’s favorite burger and all our favorite burger photo, no less!

This isn’t the first time Kelly’s has found themselves in the news. Head Chef Izzy has found himself as the face of Kelly’s on local News Channels such as KPNX, KPHO, KSAZ, and KNXV preparing some of his and the locals favorites: the Tea Sandwich, Porch Chops, Calamari Salad, and that oh so delicious Twinkie!

Great job guys! Now lets see how your flaming hot dishes compare to those of other hot spots in the Valley. There is no doubt in our minds that Kelly’s is one tough contender!

Food Styling for Photos – Pasta

  • Cook the pasta in a big pot with plenty of boiling water so it has lots of room to roll around. The starch that is released from the noodles needs room to separate from them. This prevents the noodles from becoming sticky.
  • Cook the pasta until it is al dente. Drop the pasta into ice water to shock it after cooking. This helps the noodles to keep their full shape after they have been plated.
  • If you are not plating the dish right away, put the pasta into a zipped plastic storage bag and add a little bit of oil to the bag to keep the noodles slippery and prevent breakage. If you are using a clear oil based sauce, add a little bit of the sauce to the noodles and very gently mix it in.
  • For long straight pasta noodles, create numerous nests by swirling the noodles with a fork or by wrapping a few noodles around two fingers then releasing them onto the plate. Avoid having the ends of long pasta facing the front of the dish. The looped part of the pasta should face forward.
  • Go easy on the sauce! Spoon it over the noodles with precision. Go slowly to avoid drips and splatters. Clean up any drips with Qtips.
  • Place any meat or vegetable toppings on the dish strategically with a pair of tongs or tweezers. Be sure that the items with no imperfections are placed in the front of the dish. Spoon or brush a bit of sauce over the toppings if applicable.
  • Sprinkle pepper, finely chopped herbs or seasonings over top of the dish.
  • Garnish the plate with a fresh sprig of parsley, oregano or other other herb that is contained in the sauce. Be creatively simple here…. if the sauce has lemon in it, place a lemon slice with the herb.
  • Photograph immediately to avoid a skin forming on the sauce.
